Bespoke is a buzzword in Los Angeles — and mixologists throughout the city offer the option to customize your own drink.

At Brentwood’s mod, elevated steakhouse Baltaire, patrons can tailor their signature Baltaire Julep — choosing the base spirit from bourbon, rum, rye, tequila, or vodka, paired with a complementary herb.

The whimsical culinary playground,  Barton G. Los Angeles and Miami, is known for its Below Zero Nitrogen Bar — and the customizable Below the Belt for Two, a boxing-themed cocktail made with a choice of gin or bourbon, arriving at the table sealed and filled with smoke. Served in a boxing ring, Below the Belt combines apple cider, organic honey nectar, fresh citrus, rosemary, and thyme. The cocktail is topped with orange zest.

Pasadena’s gastropub Blind Donkey brings three takes on the Mule– the traditional Moscow with Reyka Vodka; the Southern-inspired Kentucky with Old Forrester Bourbon; and the Irish Mule with Tullamore Dew Whiskey. All three are prepared with Giffard’s Ginger Liqueur, Bundaberg ginger beer, and lime.
