Golden Tilefish: Sourced from The Hampton’s, this fish is brined in saltwater, scales on, before  being sautéed. The crispy fish has the texture of breaded fish — and is accompanied by olive tapenade, wilted spinach, heirloom tomato, and zucchini noodles.

Magic ‘Machi: This dish is served with pineapple, avocado, shiso, yuzu, and serrano
Local Hiramasa: This fish is served with nori chip, macadamia tahini, radish, tiradito, and agretti.
