Saluti! Negroni Week in Santa Monica

Ah, the Negroni. The iconic Italian aperitif is being raised across town in celebration of  Negroni Week June 4-9, with restaurants donating a portion of proceeds to the Surfrider Foundation.

According to legend, the Campari cocktail came to be when an Italian count demanded a Florence bartender replace club soda with gin when preparing an Americano. The rest is history.

To toast Negroni week, two Santa Monica hot spots are offering their own riffs on the classic.  At The Independence and at Copa d’Oro,  Vincenzo Marianella offers two takes with proceeds to benefit Surfrider Foundation.


At The Independence:

1.5 oz gin

¾ oz. Chinato Vermouth

¾ oz. Amaro


3 dashes of orange bitters

Garnish: orange twist

Velvet Negroni

1.5 oz. gin

¾ oz. sweet vermouth

Floating layer of Velvet Campari

Garnish: orange twist
