At The Wallace, Culver City’s home of seasonal Cali-cuisine, Director of Beverages Greg Bryson says of the restaurant’s seasonal cocktail, “For the Watch is an obvious reference to any Game of Thrones watcher — and a variation of the classic Blood and Sand.

The Halloween cocktail pairs Lawai Japanese Whisky with Amaro CioCiarro, Cointreau Guignolet (Cherry), grapefruit juice — and yes, squid ink! (FYI, in Japan, the spirit is spelled without the “e!”)

Over in Hollywood, Los Balcones  bartenders have come up with The Final Burn, a mix of El Silencio mezcal, Alpine liqueur, yellow Chartreuse, fresh lime, absinthe rinse, and activated charcoal. Josh Suchan, Los Balcones’ Bar Manager says, “One of our bartenders and I wanted to make a spin off of our favorite cocktails, The Last Word with mezcal. The Last Word is a garnishless drink — and so was the Final Burn — till we saw the opportunity to use the charcoal as a simple yet theatrical garnish that plays into the overall concept of the cocktail.”
